I have some venison marinating but I need some help with the BGE setup. Please help with:
how long-
how hot-
what setup-

what I have to work with is:
large BGE
BBQ Guru DigiQ
plate setter
grill extender
rib racks, etc

  • WV Mike....the recipe that I have calls fo 150* in a oven for 4-6 hours. Did my last jerky cook on my L BGE at as close to 200* as I could keep the egg. Took about 5 hrs to get the meat dehydrated. Taste and texture was great...used hind quarter and back strap meat. Used the regular grate (not CI) and the extended grate and the plate setter for inderict heat. Used pecan wood chunks for smoke. Pecan, to me, Has a mild hickory flavor.

    FYI...my marinade recipe;

    For 1 # of meat.

    2 Tbsp Salt
    1/2 tsp pepper
    1/4 tsp cayenne pepper
    1 tsp garlic powder
    1 Tbsp brown sugar

    Cut meat into 1/4 inch pieces, any length, Sprinkle mixture over meat and refrigerate over nite in the frig. Dry with paper twls and place on grates.

    If you cook more than 1# of meat be careful not to double the salt ingrediant.
