Raspberry Chipotle Rib Tips

<p />Thought I'd try something different yesterday. Picked up a really meaty pack of three racks of rib tips at Walmart of all places. Took them home and seasoned them with Grilla Shaker, then rubbed them first with mustard and then with raspberry chiplotle sauce. Let rhem sit a little while and put them on a 225 - 240 degree grill with an elevated grid. Didn't use a drip pan, but used several irregular pieces of broken 1 inch firebrick to deflect some of the heat but allow the juices to drip through to the coals. [p]Smoked them with Virginia Black Cherry compliments of NatureBoy for 4 hours, basting every hour with a mixture of raspberry chipotle, balsamic vinegar, mustard and a couple of tablespoons of butter.[p]They had the most beautiful shiny glaze, and man, what a flavor. Quite a meal for $5.05.

    Do you have a local store or chain store that you get your Raspberry Chipotle sauce? I have been looking and have not had any luck.

    Raspberry/Chipotle Sauce[p]18 oz Hunts BBQ Sauce
    16 oz. Knotts seedless Raspberry Preserves
    8 oz white vinegar
    6 canned Chipotles en adobo chopped extremely fine
    3 TBS garlic crushed
    1/2 stick sweet butter [p]
    Mix all over low-med heat and simmer until all are well mixed.
    This sauce is sweet and hot so you don't need too much! [p]
