got some big old meaty ribs at the costco the other day. ..cut each rack into a 'st louis' rack and separate piece. . .one set i did up with gulden's brown mustard, then a heavy coat of Blue Smokes fantastic new Witchy Red Rub. . ..the other rack i smothered with applesauce and Nature Boy's dizzy pig raging river rub. . .put them on lo and slo for about 6 hours at 250 (went up to 300 the last hour to get them done) with a big chunk of apple wood. . .the last hour i coated the witchy red rack with some of Blue Smoke's Happy pappy sauce, and the raging river rack with some sweet baby ray's sauce. . .[p]here is the picture when they went in the egg. . .[p]
[p]and here is the picture when they came off. . .the gap in the witchy red rack is cause buddy brett came over to 'assist' and offer some advice as to when to pull, and we started into the ribs before i could get a picture (big old grinning thing here). ...[p]
[p]man, these were some good ribs. . .brett, being the new kcbs judge that he is, rated the witchy red ribs an '8' for taste (he was tough on the texture though, only gave me a 5 - 6). . .[p]but both racks were delicious. . .one thing for sure, that witchy red rub continues to amaze as to how it tastes on different foods. . .we've had it on ribs, burgers, chicken a couple of ways, and it is fantastic on everything we've tried it on. . .[p]and raging river from dizzy pig continues to be great on everythng too. . ..
