<p />Last summer at the BGE HQ, Wise One, djm5x9, the Fat Man, and Dave's Not Here discussed smoking cheese.[p]And after Nature Boy brought up Queso Blanco (non-melting white Mexican cheese) last month, this sounded like the perfect marriage.[p]So last Sunday I decided to give it a whirl. The results were spectacular.[p]The picture is the final product and the link is a brief tutorial of the process I used. Yes, it was a lot of trouble, but well worth the effort and it was a great way to waste away a Sunday afternoon whilst enjoying a few brews.[p]The Egg is amazing,

Dave's Not Here,[p]Smoking cheese is one of those things I haven't tried yet...looks like something I need to do soon, or here in Florida, I won't get a chance for awhile...![p]Tonia

QBabe,[p]Yes, you better soon. My Big Red can be over 150°F out in the sun, without any lump or fire. [p]It's a real pain, but well worth the effort. Much better than any smoked cheese that you can buy.[p]BOB

Yea, it probably needs to be pretty cold outside. During this cook the outside temp was about 45°.[p]I'm heading to Tampa next weekend to thaw out and to take in the Gasparilla celebration in Ybor city. Looking forward to some good Cuban grub. Won't get a chance to drop by Gainesville.[p]Dave

Dave:[p]Glad it worked out well for you. The past couple of days have been excellent for cheese smoking here in Atlanta as you well know. Yes, smoking cheese can be work, but the answer is smoking in volume volume. I need to smoke some more myself before it gets too warm!
