It has been a while since I boiled water for my temp probes. Here is some pic's of my fact finding mission.

First I checked to see at what temp water boils in my area and elevation and barometric pressure. For me water boils at 210°. So, now I will check my Dome thermometer. It appears to be very close so no change hear.

Next I checked my Thermapen.

I called Maverick Ind. a couple days ago and asked if the ET-73 can be calibrated and the reply was no. They went on to say that the probes are celebrated when manufactured.
Now the ET-73 using the high temp meat probe on the food side.

Next I plugged it into the pit side. I say close enough for me.

So, now I got the CyberQ II out and when I checked these probes I was getting low on water and the temps went down a little but still this is close enough for me.

I realize I can use cold water as well but, I did not see anything wrong with what I have now. Tim
