    Oh, I love fajitas! Flank steak, onions and peppers with all the fixins!

    I just T-rex that steak and put the onions on as a couple of whole slices held together with toothpicks, I just clean out the pepper and lay it out as one piece. They are coated in oil and fajita seasoning. Veggies go on after the sear. Once the Egg gets down to 450, place them on there. They can cook while your steak roasts, and then your ready to go. Slice everything before serving. I have found this method works and I don't lose and veggies through the grate!

    On my menu for the next week or so:
    Grilled eggplant to go with the baked ziti (which will be done in the oven-GASP!)
    Turkey noodle soup
    Gumbo (going to do it on the egg for the first time)
    STEAK!!! Don't do steak very often, but had a craving.
    Fried rice

    In the not too distant future:
    another batch of chili

    Last week:
    Turkey!
    Some outstanding burgers about a week ago
