Mad Max has a great write up, and the turkey will come out with a light smoke flavor, its a roasted turkey though.
To smoke a turkey, and I've only done it once on the Egg...3 times in a Bradley. Egg setup with platesetter legs up, drip pan and turkey stand.
I loaded up with lump and a mix of apple and cherry woods. Get the Egg steady at 275.
I filled the turkey stand with Mango juice and herbs. The turkey had brined for 24 hours, rubbed with Dizzy Shakin the Tree, I don't know what your plan is in that regard.
It took about 7.5 - 8 hours.
Took it off when at 180 in the thigh. Mad Max suggested draping a bag of ice over the breast for 20 minutes before putting the turkey on the egg. It cools the breast meat off so that it doesn't cook as fast and therefore doesn't dry out. I think that's a great idea, although I don't know if it will help in a 8 hr cook.
Made a lot of great sandwiches! I've never smoked a turkey to serve immediately so I don't know about how juicy it is when it comes off. I always wait to carve up for sandwiches, 'til its completely cooled off. Good Luck. -
