I just saw the America's Test Kitchen episode about dry brining on Saturday. Then this morning I read this article...apparently this is the latest fad in t-day turkey.

Note: ATK mentioned that this is only for non-injected birds. You don't want to go adding more salt to a bird that already has salt added.
