<p />I took advantage of the half time break to cook up these delicious boneless pork chops Sunday night. It was about the time that I was finishing up this high temp sear that my wife walked outside and told me how revealing the half time show really was.[p]It had been a while since I had cooked pork chops, and man was I pleasantly surprised with the results. These were cut fresh from a whole loin, 1-1/4" thick, and seasoned with olive oil, salt, and pepper. Seared, rested, then roasted, these were the juiciest chops I've ever had. With Prime NY Strips still at $17/lb, these $4/lb pork chops are a low cost alternative with very little sacrifice in the flavor department. I'll definitely be doing these more often.[p]Happy cooking,[p]TRex
