Finally!!! The quest is over!!! Thanks to the advice of my fellow eggers, I have created the best ribs ever. Here's how I did it:[p]Peel off membrane
Marinated 2 racks of pork spare ribs in grapefruit juice overnight
Hand rubbed yellow prepared mustard on both sides
Applied dry rub liberally to both sides
Put one good sized piece of pecan directly over BGE Lump Coal
PLaced ribs in rib rack directly on top of grill (direct heat)
Let 'er rip for 4 hours, and then liberally applied olive oil every hour thereafter until ribs had cooked 8 full hours.[p]Honest to freakin' Pete, my neighbors were shocked and awed! they could not believe how good they were, and I gotta tell you, they were AWESOME![p]Thanks fellow eggers!! I'm throwin' rocks at my $2,000.00 steeel smoker. I could of had 3 BGE's!!!

mark thewood,[p]8 hours!! Wow. Did you use any foil? I did my best ribs EVER as well on Saturday. Similar technique--remove membrane, 20 hour marinade, did them for 5 hours at 250.

How did you keep the fire going for 8 hours!

SuzieQ,[p]You should be able to keep the fire going in a BGE for 24 hours or more if you fill it up...[p]Tonia

Nardi,[p]the acid in the juice tenderizes the meat. No taste effect at all
