I begin the day planning a nine hour cook and my meat gets to temperature a full 7 hours before I was ready. Virtualy in the middle of my cook I had to totally change gears and completely change the cooking platform, from direct to indirect. From a cooking temp of 272 to a cooking temp of 200 and I barely missed a beat. Oh yeah, the meat turned out GREAT! I couldn't have pulled this off on my old cooker.[p] Thank You BoB V and everyone else who came to my rescue. The green egg and the BGE forum. What a combo.
