Beef Short Ribs - Boneless - Cook ?

Unknown
edited November -1 in EggHead Forum
First thanks again for the tips on temp control to those that guided a "new guy". I have some boneless beef short ribs about 2 inches thick. Want to cook them on the egg this weekend. Any suggestions on cook time, temp, wood for flavor and rub/sauce?

    Greg,
I'm not sure on the difference between beef short ribs and regular ribs, but I do beef ribs often. They should be cooked indirect around 250* for a long time. 5+ hrs I would say. If they are too tough, they need to be cooked longer. I'm sure someone will chime in on rubs or sauces. I use regular bbq spices and sauce on mine.

  • Wardster, Thank you very much. These ribs look almost like a small roast. About 10-12 inches and thick. Any help would be appreciated on cooking time.[p]
