edited November -1 in EggHead Forum
Last week i was in Louisiana and bought a 2.88# Stuffed Rolled Round Steak. It is stuffed with pork, onions, red pepper , bell pepper and salt. The problem is there are no cooking instructions. Can anyone help. Thenks

  • Bob Linscomb,
Well, I would guess that you need to cook it until the pork is about 150° (at least 150°, the gubmint sites say something like 165° but I am a veritible wild man sometimes). That said, I would cook it direct on a raised grill at about 325° or 350°.[p]Good luck with it and let us know how you cooked it and how it came out. Sounds like if you were to have a decent little rub on it that it would be most tasty.[p]Brews
    Matt.

    Bob Linscomb,
hope your visit to Louisiana was fun, as for as the rolled round steak, I never cooked one on the egg, but I would cook it indirect in a V rack with a pan of water. If the steak sits just out in the open without added moisture, you'll be chewing a piece of shoe leather. I'd shoot for about 325 degrees and expect it to get tender in about 3 to 3.5 hours and as much as 5 hours. Hope this starts your venture and Good Luck. Geaux Jake !!!!!
