Ideas for Indirect Set Ups???

I have been looking over the forum trying to get ideas for indirect set ups. If any of you have ideas that have worked out well it would be nice to see a discussion on the topic.
[p]Also, I have been having a little trouble getting my grill temp down to mid to low 200's and stabilized. Looks like I need to shut off the air flow to almost nothing. Any comments on this?[p]Any comments appreciated.

    You shouldn't be trying to get your Egg "down" to the low 200's. You should be closing the vents as it the Egg rises into the low 220s and try to keep it from going above your target temp as the temp rises. Once the ceramic of the Egg gets hot, it takes a long time for the ceramic to give up that heat and cool down.     rsedgar:[p]Indirect cooks . . . Blasphemy! Charcoal cooking is all about direct cooks . . . (or cooks with charcoal on the opposite side of the cooker from the item being cooked!)[p]If I may suggest, direct cooks with an elevated grate in the upper dome area . . . Let me know your results.

    I just finished reading your directions for doing pulled pork. I plan on doing five 8 or 9 pound pork butts this weekend. Do you think your directions would be close to the same as just doing one butt? I have a plate setter and also an extended grille. Do you think I'll have to move the bottom butts to the top and visa versa about 1/2 way through or just leave them how I start them? Thanks for your help. See-Yaa

    No rotation is necessary. We've found that the butts will finish at random times, however there is no rhyme or reason to the order. Sometimes, butts on the bottom are done first. Other times, the ones on top will finish up quicker than the bottom ones. Just monitor temps and start checking each one when you think they are getting close to your target temp.[p]Jim
