Eye of round advice

Wanted to make chili tonight. I bought some stewing beef which I thought looked a lot like eye of round.

It's been on for three hours and it's still as tough as pieces of an Indian rubber ball. Will it ever tender up?

If it was really lean it might take a bit but you should be fine. I have a few cube steaks simmering in onions and mushrooms now.

It will survive. 3-4 more hours. Have some adult beverage and enjoy te evening. It will taste better tomorrow anyway.
PS if it is on the BGE I have been known to cook chili or gumbo 4-5 hours and then when I go to bed shut the BGE down and leave the pot on overnight with the lid off., BUT I do not have to worry about the pot's contents freezing. -

Steve....It will tenderize. You may want to throw a lid on and increase the temp....you want pretty decent bubbling activity to help break it down....pretty aggressive simmer should take care of it in an hour or so.....
