Tonight's chicken thighs were marinated for about a day in Goya Mojo Criollo marinade and cooked at 350, raised direct with a couple of hickory chunks.

Took a LOT less time than I thought. I checked the temp about 15-20 minutes before I thought they would be done and they were at 200*!! No matter. OMG!!! What wonderful flavor!! Moist tender, delicious - and the skin was sooo crispy!

You HAVE to try this!!

Oh, and thank you, Molly - you haven't steered me wrong yet!
