Thanks to J Slot, Wise One, and RhumAndJerk my 3 butt cook turned out great. Had them on for 20.5 hours. About half the time the temp was 225 but the last half I raised it to 250. Pulled great, bone almost fell out. Covered with mustard and a heavy rub. Great bark and smoke ring. Used apple and hickory. One of my buddies already called bragging on the one I fixed for him. Thanks again. God, I love the Egg!! tstick

Congrats...it's always a special feeling to get such results after the 20+ hr vigil. [p]I'm curious about your choice of wood, and specifically the fact that you blended two different ones. I like hickory with pork, I've found pecan to be quite to my liking too. I've generally saved the milder flavor of apple for things like whole or spatchcocked chickens. I've never tried the combination you mentioned. Can you taste the apple wood flavor within the hickory? I'll give it a try.

WDAN,I always try to blend woods. I think that a lot of one particular wood gives kind of a bitter taste. I probably use more chunks of wood that I should. I just like a smoky taste (besides, I have a lot of apple on hand!) tstick
