First you get the Elder Ward recipe off TNW's site, build a fire, throw your meat on (even if it's snowing) and hunker down for the night.[p]Then you spend 20 hours + staring out your kitchen window while you keep an eye on the Redi-Chek.[p]After 20 hours you open the lid and the lump takes a deep breath for the first time and starts exhaling like a dragon.[p]You bring the guest in to a cutting board.[p]Pull him apart, put him in various bowls with samples of the vinegar and Piedmont sauces from Mr. Ward (and some slaw).[p]Then you eat. . . 5 sandwiches.[p]The meal was easier than posting these photos.
