Whats the best way to cook potato(e)s

on the BGE ??? Can I cook them whole ?? If so how long at 275 deg.

Memphis,[p]If you want to bake them whole, I suggest coating the outsides with olive oil and kosher salt, wrap in aluminum foil, punch holes in the potatoes through the foil with a fork, and cook for about 1.5 hours indirect at 400 - 450 dome temp. They'll be soft and the skin is the best part.[p]TRex

TRex,[p]I like to poke holes in the taters first, then grease 'em up with lard or bacon drippings. Wrap in foil and put them down right on the coals. Turn after half an hour, and roast for another half hour (one hour total). If they're still hard when you grab 'em with your gloves on of course, give 'em another half hour (though an hour works for me).[p]Ken

My 'twist' is to start em in the microwave til just a slight 'bone' is left in the center of them, then do the olive oil/coarse kosher salt thing and let go direct (but off to the edges). That way they get a hint o' smoke flavor that doesn't happen in the foil.
With the pre-cooking, only 20 minutes or half an hour does the trick and a 350° fire allows for many options as far as meat cooking along with taters is concerned (loin chops, roasts and/or tenderloins are great at that temp).

Memphis,I use something I bought locally that seems to be unique to most folks. They look just like a large common framing nail about 4" long and are made of alumimun. I just salt pepper oil etc the potato, wrap tight in foil and then run one nail in the end of each one. That "nail" insures the potato is cooked throughout. They were dirt cheap and I bought them at a family owned hardware/seed store called Kelly's - one of those old kind of stores that should have a sign out front which says "if we don't have it - you don't need it"

Good evening, just took mine off and they were great. I had both irish potatoes and sweet potatoes wrapped in foil. Rubbed with olive oil and salt. Poked with fork. Cook direct in dome temp of 325 for 1 3/4 hrs. EXCELLANT
