I'm kinda new to this egg'ng and love it! Tonight I had some Talapia (not sure of spelling) bit it's also a very mild fish. I used the Raging River rub with a butter and maple syrup glaze at the end of the cook. It's the recipe for the salmon at Chris's site. It was really awesome. I'm sure it would be good with halibut. My wife and I are not real fish eaters but I think this will change that. I may even try it on salmon next (we usuually don't like strong tasting fish)[p]I sliced up some baby red potatos, salt, pepper and butter wrapped in double foil and sealed. Got the egg to 400 and cooked the taters 40 minutes turning over the packet a few times. took it off and set it aside and put on a veggie grill and grilled some young asparagus (salted and peppered) than the Talapia. Buttered the asparagus after taking off the grill.[p]It was quite a meal.....good luck

Hey funny.. I just tried the Raging River / Maple butter on tilapia (thanks to another post recently)and I agree with GBZ.. it was fantastic...[p]Drizzled filets with oil then dusted with raging river rub. Cooked the filets for 3 min a side @ dome temp of 400. Afterwards brushed filets witha 50/50 mixture of maple syrup and butter... big hit.[p]I guess that halibut being similar to tilapia would work well with this recipe too...[p]

virginia, you could make a nice casserole if you could get some scallops and shrimp. bigbawbs recipe in the submitted recipe section is very good.

try marinating in 1/2 v-8 juice and 1/2 soy sauce (not for the salt restricted diet) for at least 1 hour and as much as over night..

v-8?? Sounds different! First time I have heard of V-8 in a marinade, but it kinda makes sense. Gotta say you have me curious!! Might hafta try that.[p]Just throwin this out, but I think marinating fish more than an hour or two is too much. Especially in something as acidic as V-8. I would think it would get all mushdified.[p]Where in Wyoming are you??? Been there several times. I love that state. It is a real nice change of pace for an east coaster.

dude, that's my big sister you're talkin to there. ..she lives in cody wyoming, although this week she i right here in virginia helpin out mom, who just had some surgery. . .[p]sis used to do cookin for an outfitter, workin on horse back, taking pack mules up into the wyoming wilderness outside of yellowstone, and between cody and jackson. . .so she can talk to you all about horsin, and campin, and backcountry cookin. . .etc. . .

I grill it w/ s&p on a well-lubricated raised grid at about 500-600, about 5 min per side. I then serve with a delicious mango salsa. I will be happy to provide the recipe if you want it. Very healthy and very tasty as well.

Here you go...[p]2 c plum tomatoes, seeded and diced
1.5 c diced peeled ripe mango
0.5 c diced red onion
0.5 c chopped fresh cilantro
Choppped hot pepper, to taste
2 tbs fresh lime juice
1 tbs cider vinegar
0.5 tsp kosher salt
0.5 tsp fresh ground black pepper
2 cloves minced garlic[p]Mix together and serve over or with grilled fish. I have used both grouper and halibut w/ good results)

Halibut is a very mild sweet piece of fish. Personally I like it with just salt, pepper and lemon juice, but that allows you to taste the sweetness of the fish.[p]Also a mixture of butter, white wine, dash of worstershire sauce, a little fresh lemon juice, and a little bit of freshed squeezed garlic. Mix to taste and brush on while grilling.[p]Method number three is get a stick of butter at room temperature (not liquified but paste consistensy). Crush your favorite fruit like strawberries or rasberries and mix in the butter. spread on Halibut after first flip, Then flip on to serving plate and put a little more on top. It will melt. then serve. [p]I would never marinade halibut in an acidic marinade over night. the beauty of halibut it is firm but tender sweet and succulent.[p]grillin Bill

see, he won't even let me answer my own questions -- any "heavy" meat fish like halibut, tuna, swordfish, holds the V-8/soy sauce mix very well and doesn't get the least bit sloppy. It's also a favorite type of recipe -- 5 second preparation time.

that sounds good. . .close to what i did, but like i said, mine needed something and i think the vinegar and lime juice will give it the 'splash it needs'. . .also, i hadn't thought about tomatoes. . .i'll give that a try next time too. . ..[p]thanks a lot

You were probably in the Wind River range at the same time we were! Tellya what, we cudda used some dutch oven cooking instead of our dried up dinner....complete with crunchy stuff from the corners of the bag.[p]We were definitely "dudes", so we wudda qualified for your services! Hope to get back to Wyoming some time, but Oregon and Alaska are next on the list! [p]How long 'til you are released from this area?
