<p />At first I was a bit concerned about such a big bird on the egg, but no more. After 6 hours on the egg at 325, we pulled it off and was very surprised at how juicy and tender it was. I did not get a chance to brine the big fella, but I did cook it breast down for the first two hours.[p]Now to start working on the leftovers.
