Cooking some BIG butts!

Well, last night, I put on the biggest butts I've ever cooked, a total of 18.49 lbs of pig, so I'm guessing about 9.25 lbs each. It's been really windy here, so I've been playing upsy downsy for the last 12 hrs (at first I thought it was just me having trouble for some reason, but I finally realized that the wind was contributing to my spikes).[p]I'm estimating they'll come off sometime around 3 or 4pm, but we'll see how things go...![p]MMMMmmmmm!

    My brother and sister-in-law (you remember them?) have borrowed my tiled Medium for a camping trip next weekend and wanted me to supervise some cooking over last weekend, so they could get some practice before showing off the advantages of ceramic cooking to their Church group. [p]She found a 10 pound (I think) butt which practically covered the grill. Maybe they're growing pigs/hogs larger in Florida this year? (-'[p]I know what you mean about the wind...We chased the numbers around the block and back (without touching adjustments).
    They decided they'd do higher temp cooks and grilling next weekend. [p]BOB
    March is JUST 2 months away!

    Hi Bob,[p]Yep, there were some of the biggest I've ever done...the dome ranged from 207° (lowest) to 288° (highest). My goal was to keep in the 225° - 250° range, but boy, it was tough to keep it stable at all yesterday! I put them on at around 9PM on Saturday night and the first one came off at 7PM Sunday and 7:30 for the second one...for a total of 22 hrs...whew![p]I'm having leftovers for lunch today and boy did it turn out good. One is going into the freezer whole in a foodsaver bag and the rest will get portioned out in smaller foodsaver bags and into the freezer for quick meals.[p]Can't WAIT for the Florida Fest in March! The pavillion is rented and we're all signed up for cabin #8 again. I need to get a few more door prize contributions so we can have a nice drawing of prizes, but other than that, all we'll need is participants!     QBabe,[p]I cooked the 10 pounder on Sat afternoon/night, pulled it and we ate on it all day while my brother cooked his first on Sunday, to try his hand at the controls. That one Aabout 7 pounds) didn't have as much temp fluctuation, I'm guessing (hey, a first timer can't have better temp control than me, can he?) that there was less wind and the daytime outdoor temps were more stable and less dropping.[p]I'm thinking that *I* would have been much happier with *your* fluctuations. Mine went below 200 a couple of times, and over 300 a few, too. I tried not to touch anything, but it's hard if your more than 50 degrees from your target.[p]Don't put it in writing *YET* but I'm trying to get more and better prizes from this end. If my SIL and brother get their beauty in time, I'm sure that they will be there. I'm again in Cabin 5, with The BBQ Weasil and his DAD. We must truly like those digs?[p]Everybody better sign up! You'll miss a great time in Florida in the early Spring. Lots of great food, lots of great people, and camping in a beautiful State Park![p]BOB
