Cooking a turkey breast. What is a good internal temp for it??

158 then cover with foil for 10-15 min

160 for the breast

Wow that's lower than I thought. It's safe to eat at 158?

Well, I'm not dead and I didn't get sick.
Actually, the final temp in the breast will go to 162 degrees during the foil resting stage. Since we do not brine the breast the 158 degrees will give a moister product than if it were pulled at 160 degrees.
