I've been experimenting making Vera Napoletana pizza on the egg, the results of which are really good pizza and about 20 MORE pounds on my already stressed frame ....so in an effort to reduce ..here's the calculation for authentic Napoletana pizza.

13 inch pie - into 6 slices - crust total aprox 600 cals so 100 cals a slice or same as one piece of bread. (home made dough using no sugar or oil ..the traditional recipe 4 cups unbleached bread flour or equiv.)

Toppings ...this is where the trouble can start. If it's an authentic Napoletana pizza, you can use part skim mozzarella and only add a few .. 10 to 50 calories a slice ... best to keep it minimal...the tomato sauce is free so I'm figuring 125 a slice ... watch out for dried mozzarella or any other cheese because after investingating this, it turns out that the cheese is the real culprit on pizza ... and of course any fatty meat added is murder on calories...

My problem is only eating a couple of slices.

I recently made a great "buffalo wing" pizza...very low in cals and a real hit at one of our pizza demo classes.
