Found the duck and chicken pics

Cut the wings off and drew the flap skin over and stuck toothpicks to hold

Got the stock going with cornish hen gravy and duck bits

Sauteed the liver in some butter for ME

Got a chicken ready for the non-duck believers

Chicken looked good

I,m not as big and strong as you are big man. The aviaters are great for cutting stuff, I put them in the dishwasher and spray with Pam.

They are Wiss. Laugh if you wan't but I've screwed up more knives than I can remember. The duck backbone is pretty tough to cut. I din't use them for tin bashing :laugh:

I have many Wiss snips. I also use game shears for the birds. They work incredibly well and typically have a little notch in one of the blades to stop bones from sliding out while you cut.
