Yesterdays simple dinner

Ordered a ready mix for guacamole. Tasted good, but can make better without the mix. Had two small green peppers from the earthbox. I stuffed them and topped with jack cheese. (Thanks Pete)

I can see how "guacamole starter" might fall a little short. I would think it would loose something without fresh squeezed lime juice. Citrus juices don't age well, and my wife and I have found that lime juice really makes the guac.
After years of assuming she hated it, my wife discovered that she actually loves guacamole, and we've been having it at least once a week all summer long. It actually works pretty well, having a baby in the house, as avocado is perfect baby food...mashes easily.
We'll give half the avocado to our daughter, and make a little guac for us with the rest. -
I discovered this summer that I liked it. We ate in a Mexican restaurant. They made it fresh at the table. I liked the way it tasted. I saw how easy it was to make it. Now I make it every few weeks. I was ordering other stuff and saw this mix. I have enough for one more batch and that will be the end of it.
