captaincraigb, I am a new egger too and last week did porterhouse steaks by the trex method. They were perfect medium rare!!

  • captaincraigb,
Here is a link to my recipes page which has Trex's writeup on cooking steaks, which Tanya referred to. Just click on "Beef".[p]TNW

captaincraigb, Forgot to say the method of cooking is on the Naked Whiz website, nakedwhiz.com. I put his site on my favorites list, he's got a lot of information there that is really helpful.

  • captaincraigb,
typically,'trex' is the way to go. .. although 1 inch is a little thin (i prefer something in the 1 1/2 to 2 inch thick range. . .regardless, you can find the whole detailed trex method in the naked whiz's website (www.nakedwhiz.com). . .here is the short version:[p]get your egg up to lava temps (700 degrees plus). ..to do this, make sure you have your ash area cleaned out good, and a full load of lump, up to at least the top of the fire box (i'll even go a little higher than that). . .light the load in two or three places. .. leave bottom vent wide open and no daisy wheel on top. .. let it go until you have flames roaring out the top of the dome and the temps are off your scale. . .[p]i coat may steaks with olive oil, kosher salt and either ground pepper or dizzy pig cow lick rub (i've heard others say montreal steak seasoning is real good too). .. [p]throw your steaks on the grill for no more than 90 seconds per side, then pull the steaks out and let them rest uncovered for 20 minutes (this lets the muscle relax)[p]put the daisy wheel on and shut the vents down till you get to 400 degrees dome temp. . .this should take around 15 to 20 minutes while the steaks are resting. . .now, careful about opening the lid as you could get backflash (again, see the naked whiz site about this phenomenon)[p]after the 20 minute rest, and your egg is steady at 400. .. put the steaks back in. .. for a 1 inch steak, 4 minutes per side should be good for medium rare. .. you will love them this way. . .[p]enjoy
