im on the coast a i do a butt about once a month for my office i like the injection idea im just afraid of creating "pockets" with the injectate. Im doing 2 thurs ill give it a whirl. thanks

Never noticed any pockets when pulling it. I stick it in and then go in and out in a fan-type pattern. I use about 1/2 bottle of injectate per butt. It's kinda messy, so be prepared. I have tried in the past to plug the hole with slivers of garlic, but that doesn't always work as well as it sounds. :ohmy:

No function, just the way my mentor taught me years ago. Actually he says to cut down to the meat and rub a good bit of rub into the cuts onto the meat. Otherwise the meat under the fat cap will not get much rub on it. Might be a "wives tale", but it works for me,

KInda hard when one is about 5# and the largest is about 10-11#.
They WERE sequentially finishing and all went into the same place. I was pretty much pulling pork continuously from about 2 pm til 6:30 pm. As they got done, I let them rest on the counter while I was pulling the one before it.

Thanks to Todd's great Carnivore Robust sauce! I contributed 2 bottles form my private stock (stash) for today's meal. I got tons of compliments on the sauce. Many thought it was home made. It was - Todd's Home !

Thanks, Dale. They have been after me to bring something I have cooked, and it's pretty hard to feed 40 or so people ribs, etc., so PP looked like the best deal.

Great Job on such a massive cook. Very impressive looking. When you pulled the pork did you use bear claws or regular fork? Do you know how many pounds of finished product you ended up with? Again, looks awesome. Wish i had some of that over here..

Bear claws are on my short list. Gotta have some of those. I used meats serving forks for the first 4 butts, but the last 2 I put on plastic gloves and did it by hand - was MUCH easier.
The second center is will be chowing down here in a little more than an hour. They are all walking around salivating. :laugh:
