For those of you who think all I can cook is Pork Butt 
This recipe adapted from a Food Network Recipe.
The chicken (Pollo) getting happy
Now the sofrite (peppers, onion, garlic) is getting happy.
Bring on the tomato sauce, cumin and bay leaf
Real happy now. Chicken, Beer, Sherry, White Wine
Chicken Broth, Saffron and Rice (Arroz)
Arroz Con Pollo (Rice with Chicken)
It is UMMMM--- GOOD!!!

Just finished up cooking the 40# of butts on my one large Egg. Don't think I will do that again anytime soon. :ohmy: Pulling 24-25# of cooked butts is quite a workout. I know you guys have got a faster, better way to do that when you do the troop cooks. My OCD just got in the way :( , trying to be too detailed with it I'm sure ! :woohoo: Pics later today! -
