Spatched Cornish Game Hens

On a very soggy night I did my first attempt at Cornish Game Hens. Spatched and seasoned with John Henry's Mojave Garlic Pepper Gold rub both on and under the skin. I threw them on the Small normal grid at 350. Once they hit 150 they were flipped to crisp the skin.





The John Henry rub is great! I was given a sample of this rub. I think I will need to place and order for more!

There's always something special about each diner getting their own little bird. Sometimes I splatcock them and other times I actually "beer butt" them using small ceramic holders we have. When on the throne they stand proud! :laugh:

Ya It's Kinda fun to eat a whole bird. I ate 1/4 of Glenda's as well!

Sorry to say those sprouts were cooked by GE not BGE. Roasted at 450 then tossed with a 15 year old balsamic.
