Hi,[p]I just received my new platesetter and I would like to smoke some ribs over indirect heat. My thoughts are:[p]platesetter feet up with grid on top of feet
drip pan with water on platesetter
baby backs on rib rack which is on the grid
250 degrees
3 1/2 hours[p]Please reply with any changes you would make to any of the above parameters. You won't hurt my feelings - promise. I am coming from a brinkman water pan type smoker (which I could do some pretty good cooking in) so I really need as much specific set up instruction as I can get. [p]Thanks,

Mike in NH,[p]Water is not really needed.[p]3.5 hrs might not be enough time over a setter with water in it - I go by when I reach 195° between the bones. Some go by how they bend. Don't just remove and eat because you hit the 3.5 hr mark is all I am saying. Sometimes they might need 4 -4.5.[p]Over the setter you can easily go to 275° without fear of burning and they more likely will be done in 3.5-4 hrs.[p]Tim

I go longer than that. Usually 4.5 - 5 hours depending on the rack of ribs and keep the egg at around 235 degrees.[p]Hope all goes well with the smoke.
