Last night we had some friends over who have "very discerning" tastes. They are very good friends, but I always want to prepare something special, as he is somewhat of a gourmet cook. I decided on Nature Boy's Salmon. Served on a bed of sauteed spinach....it absolutely blew them away! Chris, you are the man! This is a no fail recipe, and even non-salmon eaters love it.[p]I also prepared a side of a corn/squash casserole. As I was searching the internet for a recipe, I was pretty much astounded by the lack of options for this dish. I finally found one that I thought would make a good base, and began playing with it. I made some pretty serious modifications, but it was also a big hit of the evening. Here it is if anyone's interested:[p]4 or 5 medium squash, sliced...I like a mix of yellow and zuchini or another green squash[p]1/2 medium onion ... chopped[p]1 can of cream style corn[p]1 cup of shredded Parmesan cheese[p]1 small can of chopped green chilies[p]1/2 to 1 cup of crumbled Club Crackers[p]1/2 stick butter[p]1 beaten egg[p]1 Tbs. sugar[p]salt and pepper to taste [p]Boil the squash and onion until just tender......drain, and add 1/2 the cheese, 1/2 the crackers, the can of chilies, 1/2 the butter and the Tbs. of sugar. Combine and add salt and pepper to taste. When it tastes good...add the beaten egg and stir in. [p]Pour into a greased (sprayed) casserole dish and top with the remainder of the cheese and cracker crumbs....drizzle with the remainder of the butter. Bake at 350 for 30 - 45 minutes....
