Mango Preserves

Our neighbor left a large jar of mango preserves from the Phillipines on our doorstep last night. It may be poisoned since he has helped round up our roaming pig, been bitten by our basset, etc...but I will go under the assumption that it is ok.[p]I have this pork tenderloin sitting here and I have these mango preserves. Also have some rum or something around that hasn't been consumed. Seems like these things should go together. Any brilliant ideas?[p]mShark

    I'd thin the preserves with rum, and a generous pinch of ginger and bruised mint and use it for a finishing sauce. Garnish with more sprigs of fresh mint for the table.[p]Ken

    drink the rum. .. then whatever you do to the pork w/ preserves it will taste just dandy. . .. :0)

  • MollyShark, i'd use the preserves for spreading inside a pork tenderloin - then slow smoke indirectly.
    when done place the loin in a plate to collect the juices.
    in a skillet saute' minced onion, garlic & some ginger with some butter, then deglaze with some rum (take off the burner to do this) allow to evaporate- add 2 tablespoons of the mango preserves and some of the meat juices ( if not enough, add chicken broth) add salt & pepper to taste.[p]to get an oriental touch add some soysauce.
    slice the tenderloin at an angle and drizzle with the sauce above.
