First, thanks to all who answered with suggestions on cooking my first turkey on the egg. Several people have mentioned cooking the turkey indirect...while I know how to do that on my gas grill, how do you set the large egg up? Thanks.

  • Smitty,
there are a number of ways to cook indirect. .. basically, you are setting up your egg like an oven, where the heat swirls around your food, not grilling it directly from below. .. [p]first, if you have a bge plate setter, you set it in your egg feet up with the grid on top of it. ..thats the easiest way. .. [p]if you don't have a plate setter, but have firebricks and a second grid, you start with your main grid in its normal position. . .place some firebricks around the grid, put a pan of water (or other liquid like chicken broth) on the grid, then set another grid on top of the bricks . . .[p]if you don't have bricks or a second grid, you can take a large metal pan, fill it with water, then set a roasting pan on top of it. .. you just need to make sure you keep liquid in the pan. . .[p]hope this helps, let me know what kind of set up you have, what you are planning to do with the bird and i'll see if i can help you more. .

mad max beyond eggdome,[p]Bad news, I let a friend borrow my plate setter. I'm planning to put the bird on V-rack, with pan for drippings/basting. Are you suggesting a second roasting pan filled with water?

  • Smitty,
yeh, something to deflect the heat from your main roasting pan. . .a shallow pie plate maybe. . you don't want to put water or broth directly in your main roasting pan or you'll end up poaching your bird. .. you may have jury rig somewhat. . .[p]i'd also advise staying in the 325 range if you have time. .. if your fire is too hot, you'll get too much direct cooking goin on there . . .[p]when i did mine at thanksgiving i couldn't use my plate setter as then everything couldn't fit. .. i borrowed nature boys steel bar and pie plate contraption (i had to refill the pie plate with water about once an hour to make sure it didn't dry out), but it worked out great and provided enough deflection to let the bird roast normally. . .[p]good luck[p]

mad max beyond eggdome,[p]Yeh, I will have to rig something up. Sound like attaching a metal pie plate to the bottom side of the grid might be the way to go...appreciate the help.

  • Smitty,
that would work perfectly. .. again, just make sure you keep it filled. . .again, when i did mine for thanks giving, everytime i basted the bird, i also made sure to put a shot of water in the pie pan. . .the baster bulb works great for both. .. [p]also, don't forget to douse your bird with some white wine. . .
