For Christmas I'm all ready for the bird on the Egg.[p]I hear of people doing the stuffing (at least extras) in the oven.[p]And advice of how best to do a basic bread stuffing in the oven -- cover / uncover? temp? ...

    simple but good:[p]saute chopped up onion, celery, country sausage, roasted peeled chestnuts, red/yellow peppers, mushrooms in a large pan. .. season with some poultry seasoning, salt and pepper. .. .[p]cut, or tear up, one large loaf of white sandwich bread. . .[p]throw it all in a big bowl together. . . add chicken broth until the all the bread is nice and moist, but not sopping. .. put in large baking pan. .. .bake in oven or egg at 350 degrees for about one hour. . .leave uncovered (if it looks like it is getting a little dry you can tent it, but i like a little bit of 'crustiness' on mine. . .do it to suit your taste. . . warning, if you do bake it in the egg, i found that the wet bread really absorbs a lot of smokey taste, even if you don't have a particularly smokey fire. . .

    mad max beyond eggdome,[p]An interesting tip I saw a few weeks back which I think QSis posted which I think she said originally came from QNETyme was if you are cooking your stuffing separate from your turkey, to consider baking the stuffing with some chicken wings layered on top of it. This allows the greasy goodness of the wings to drip into the stuffing to provide some nice flavor similar to that which would have been provided by the turkey if the stuffing was cooked in the turkey.[p]I haven't tried this yet, but will next time I cook stuffing separately.[p]Later,

    i think i saw something on emeril one night where he threw a whole roasted turkey drumstick into the middle of his.. .can't hurt. . ..
