Temp on Boston Butt

Ok here goes...Marinated for 8 hrs...place on BGE at 1800 hrs...It is now 1915 hrs...internal temp is 105....dome temp is hanging at about 200-210....Trying to prepare butt to serve at a Christmas Party Luncheon at about high noon tomorrow....Is this a concern for a newbie trying to do a low and slow....My concern is it will be ready at this rate sometime tonight or early in the morning...Want it to hit 200 tomorrow around 1100 hrs.....Also running out of cool ones is the major concern lol

highlander, also top vent shut down and bottom vent is only open enough to get to get a whisp if air

highlander, keep watching that dome temp. If you continue hanging at 210 or so you should be good. However, getting to 205 internal may be quite impossible at 210. Look at the thread below by drbbq where he talks about holding the internal temp in the 170-180 range for as long as possible. You should be ok for early tomorrow morning (0600 to 0900) depending on the size. Read also where drbbq says you don't need to get to 205. At 210 dome, I don't think you will. Good luck. It will be wonderful at anytghing over 180 internal.

highlander,[p]I did my first overnight cook on Friday. About a 7.5 lb butt. Put it on at about 7 p.m., kept the dome between 220 and 250 all night. The butt reached 200 at 11 am on Saturday. Wrapped it in foil and put it in a cooler till 12:30 when we were ready for lunch. Unwrapped it and pulled it and ate like pigs It was a hit.

Maybe I was to quick to post...It is 0445 hrs Monday Morning..internal temp is 150 and the dome temp is 200...all is well...Thanks to all who responded

QBabe,[p]I wound up getting up a few times. My redi-chek did not work in my bed room when the temps outside dropped (probably could have used some fresh batteries, but I didn't have any). Only adjusted it once during the night, probably would have been fine without me, but it was the first one.
