Stacking 2 Briskets?

I have two 8 lb briskets I want to smoke. Do not have materials or time to make a second grid. Can I stack one brisket partially on top of the other? Will it cause any problems other than inhibiting bark development on the overlapped part?

    I think not only will it inhibit the bark, but the meat will get less heat where they overlap, and it will reduce the airflow that you want around the briskets. Any chance you could set up a second grate? You can elevate it with bolts or firebricks if you don't have a BGE extended grate. Personally I'd be tryin to find some way to set them up so there is airspace around each.[p]It'll still work overlapping, but won't be optimum. Once they shrink you might even be able to get them seperated long enough to form some bark where you had overlaps.[p]Just some thoughts. WooDoggies on the way for a visit. Gonna do some cookin and almond smokin!

    I do have some firebricks and a second 18 inch grid. Will the second 18" grid fit in the dome if it is elevated above the main grid which is resting on an inverted platesetter?

  • TxEgg,yep, it will fit. You can raise the second grid by using carriage bolts and washers bolted to the top grid(as legs) or you can use split firebricks or you can use ceramic kiln posts to raise the second grid.

  • TxEgg, Could you 'bend' the briskets into a u shape and fit them into a vertical rib holder?[p]Just a thought..[p]SB[p]
