Prime Rib, w/ chef will's tip, most excellent

had wife's family for xmas dinner tonight since they can't be here next week. .. .did prime rib. .. .fantastic. . [p]bought a 7 bone-in prime rib at cost co this morning. .. split it into the largest 4 bone roast and small 3 bone roast (into the freezer for the future). . .took the 4 boner, rubbed it good with olive oil, kosher salt and herbs de provence. .. then took a tip from chef will, split and peeled back the fat cap, put some more salt herbs de provence and 6 or 7 fresh sprigs of rosemary on the meat and laid the fat cap back on top of it. . .thanks will. . .[p]set up the small egg at 500 degrees, threw in a big handfull of jackdaniels chips, put the prime rib on direct for 15 minutes. . .had the large set up at 325 with inverted plate setter and grid. . .after searing for 15 minutes over the flaming wood chips, moved the roast over to the large to let it roast for almost exactly two hours (pulled it at 125 internal). . .it was superb. . .the extra rosemary worked very nicely. . .[p]served it with mashed potatoes (instead of butter and milk, i used sour cream and cream cheese, really excellent), and a green jello mold. .. [p]just a great eggen meal. . .[p]

    Enough...... Enough of that tantalizing description! Because of work schedules I won't roast my prime rib untill
    wed. Thanks for the info on preparation[p]
