Christmas office party

Tomorrow presents yet another wonderfull chance to cook on the egg for a large crowd. Good friend of mine has enlisted my talents to prepare up to 40 new york strip steaks - T rex style - and grilled shrimp for his office party. He owns a wholesale butcher shop and provides me with many wonderfull cuts of meat that we have enjoyed. With 30 degree temps and chanceof snow it promises to be a great time!

i also want to know how you pull this off. .. how will you keep searing temps up, and then once the rest is over, will you throw all 40 steaks on to dwell at once???[p]pretty cool though, that may be some kind of record. ..

ahhh. . . that esplains it. . .will you do all the sears in one and then dwell them in the others?. .. .or sear in all three, then rest and dwell in all three again. .. i can't even imagine how great that will look and smell. .. fantastic
