I see you have been assisted! Thanks Mike. [p]Were you able to get some good fresh squidlies Mick? Didjya get ink all over the place when cleaning them? I need to do me some squid again soon. Make sure and torch 'em good and hot!

Just out of curiosity, what happens if you don't crank up the heat like it says in your recipe? Do the squid get rubbery or something? That's what I would imagine would happen. I love squid, especially tentacles.

Yeah, they get real tough if you don't cook turbo on 'em. Any longer than 3 minutes or so and you are into the rubber zone. Now, from what I understand, squid can be slooooow cooked in a stew kinda thing and end up tender...but other than that, it is a heat blast kinda thing. Speaking of tentacles, they get nice and crunchy at those temps. Definitely the best part if you are prepared for the texture![p]Multi-legged creatures to ya

I had the bottom of my wok cherry red! squid ended up so tender it was sinful! do them in small batches. I find a cup or so at a time and you keep the heat really up there. Too many and the heat gets sucked out of the wok and it takes forever to get back to turbo temps. Did my last batch with lemon juice and garlic wicked good!
