Channukah experiment - potatoe latke success

ok, for those of you into Latkes (potatoe pancakes). .. i made them on the egg tonight as a trial for next friday (first night of channukah). . ..and they were FANTASTIC. .. and simple. . .i figured, if could do crab cakes in the egg, i could do latkes as well as mine are about the same consistency raw as my crabcake mixture. .. .[p]first. .. set up good established coals in the egg (i had the fire going for over 2 hours doing a pork loin (ok, ok, no i'm not kosher, and the stuffed and bacon-wrapped loin was excellent). . .for the latkes, i had the grid in normal position with fish grid on top of it and temps right at 400 degrees. . .[p]for the latkes, i had 5 medium potatoes, 2 medium onions, two eggs, about 6 tablespoons of flour and salt/pepper to taste. . .i do a course grind on the potatoes and onions in my kitchen aid, mix in the eggs and flour and salt/pepper. ... that's it... .[p]oiled the fish grid good between each batch of latkes. . scooped a good spoonful of mix on to the fish grid. . . i was able to put about 10 on at a time. . ..turned them at about 5 - 7 minutes left them on another 5 minutes or so until done, golden brown on both sides. .. served them the traditional way with applesauce or sour cream. .. [p]wife and the kids loved them. . . we will definitely be doing them this way next week. .. .

mad max beyond eggdome,[p]My wife and I are always invited to an annual channukah party freinds have in Portland Maine every year. They don't keep kosher either and I've kidded them about any pork that's done on an Egg is acceptable. Now latkes! They'll love it! Should have seen their eyes when I carried a butt in the cooler to their house a couple of years ago. That was when they were convienced anything fron the Egg is Kosher! I'm going to forward a link to this page.

Sundown, just tell your friends that everytime you fire up the egg, any non-kosher impurities get burned off, and lacking a rabbi's blessing, the egg is officially 'kosher' again. . .LOL. . . you should go ahead and make them latkes this year. .. tell them you suddenly got religion. . .[p]

mad max beyond eggdome,[p]For an interesting change of pace, try adding sweet potatoes. I like 1 part (by weight) sweet potato to 3 parts white potato.[p]Ken

we like sweet potatoe pancakes as well.. .have your tried them on the egg???. .. i'm sure i'd have to be a little more careful doing them direct to make sure they don't burn due to the natural sugar content. . hadn't thought about doing a mix of sweet/white. . sounds good!!
