Turkey and thermometers

OK. Just got my Thermapen (green). Tried it in a grilled burger patty side-by-side with my Polder. The Polder seemed to be about 30 seconds behind the Thermapen but even after letting it catch up, there was about a 7 or 8 degree difference at 160 F. So, I checked them both in ice water and then hot water and found that (after the Polder caught up) they were within 1 degree of each other. So, why the difference in the burger?[p]Tomorrow I'm going to do another turkey in the Egg (practice for Christmas). What temperature should I shoot for and will I see a difference in the two thermometers? Which one do I count on?
