Turkey and thermometers
OK. Just got my Thermapen (green). Tried it in a grilled burger patty side-by-side with my Polder. The Polder seemed to be about 30 seconds behind the Thermapen but even after letting it catch up, there was about a 7 or 8 degree difference at 160 F. So, I checked them both in ice water and then hot water and found that (after the Polder caught up) they were within 1 degree of each other. So, why the difference in the burger?[p]Tomorrow I'm going to do another turkey in the Egg (practice for Christmas). What temperature should I shoot for and will I see a difference in the two thermometers? Which one do I count on?

By the way, if it matters, the Polder was reading lower in the burger.

If the Thermapen reads accurately in ice water and boiling water, believe the Thermapen. Food inspectors in NC use it when they inspect restaurants, fwiw.[p]TNW

Mick, I cooked 2 whole turkeys and6 turkey breasts for t-giving and cooked them at 325....all were great and great looking...had them raised with a drip pan....also dod 6 whole salmon sides.....
