Shrimps \"Al Mojo de Ajo\"

Literally translated from the Spanish, mojo de ajo means "gravy of garlic". I just think of it as "delicious," and order it every time I can. This is my mother in law simple recipe.
Ingredients: Evoo, butter, shrimp , rinsed, shelled, and deveined, leaving the tails on, garlic cloves chopped, salt & paprika
Instructions:
In a small bowl, mix the EVOO, butter, garlic, salt and paprika. Pour this mixture over the shrimp in the pot. Dot with the remaining butter & leave marinating overnight.

Preheat the Egg to 600°F. & prepare a shallow pan or clay pot by greasing it with some of the butter. Lay shrimp in one layer on the bottom of the pot.
Place the pot on the egg and cook for about 4 minutes, or until the shrimp turn pink and opaque.

Loren fixed some wild rice with almonds & spinach...

..... & some zucchini filled with caramelized onion, corn & dehidrated tomatoes


Serve immediately with French bread for sopping up the leftover juices. DELICIOSO!!

That does look delicioso, I am going to make some and eat eat it all myself. Unfortunately or fortunately :ohmy: the First Mate cannot eat shrimp.

TKS....a little bit more EVOO, actually you could skip the butter if you wanted.......on the other hand you could add some dried guajillo chili to your taste...

I, too, saved that recipe. I've god frozen shrimp in the freezer I brought back from a fishing trip in south Louisiana. Now I know what my next shrimp cook will be !

Heading out to the annual "Day in the Country" festival in a little community about 15 minutes from here. They are also hosting a Memphis BBQ Network-sanctioned competition. Got the top down on the convertible and picking up our neighbors shortly !
I was asked to help compete in the pork shoulder category, but when I found out one has to cook 5 shoulders for the judges, I politely backed out. I will try the KCBS competition next Spring - only have to produce presentation boxes for the judges, not whole, unpulled butts plus the boxes! :ohmy: -
A wise decission Clark :laugh: take some photos of the festival....& the convertible of course...... :P Had one when we just got married...but then my wife decided I needed a more family type car :( :P and as I'm the one with the last word in this home I said....YES DARLING..... :laugh:

Sure here you go......we made 4.5 lbs of it so I'll put it in more normal measures.... :laugh: .....say 1 pound
1/2 cup EVOO to cover the shrimp
2 tablespoons butter,
1 pound shrimp , rinsed, shelled, and deveined with tails on
6 cloves garlic, chopped
1 pinch of salt
1 pinch of paprika
