Seafood for a Competition Cook

I am sponsoring a team in a small town cooking contest this weekend.One of the entries is seafood.Any suggestions? :huh: All advise appreciated.

How about a small paella,use some chorizo,but just to season the pan.I don't know if the dish has to be all seafood?

I thought of that.I know it has to be presented in styrofoam boxes and wondered if spooning it outta the pan and into the styro box would screw up the presentation. :unsure: :ermm: :huh: Thanks!

Don't beat me up too badly, but grilled salmon with Bernaise with some crumbled bacon it a decent cook. Being in Okla fresh seafood is not really an option and salmon is usually enjoyable. Best of luck and thanks for sponsoring an event. If ya live by the ocean ya probably should disregard this and go with fresh available. Good luck

When I first read this…I immediately thought of a Sea Food Soup that I love to do, with a second thought of Crab Cakes! Or Salmon Cakes with a Dijon Mustard Sauce!
I know you mention presentation, and coupling that with Styrofoam… :( Sorry the two don’t / can’t go “hand in hand” in my mind. Sooooo…Taste has to win them over! Yes?
After some thought, I am however still leaning very heavily toward a Seafood Soup Du’ Jour.

I guess so.All entries have to be turned in using the boxes that the organizers supply.It will be all Blind judging.I guess it's their way of ensuring everybody's entry is on a level playing field.You are allowed to garnish the food inside the container.

Crab or fish cakes sound like a wonderful idea. An easy cook in a CI skillet or griddle, the seasonings can be very creative, and they hold well. If the rules allow for a sauce, that could be a real knockout punch.Happy Trails~thirdeye~Barbecue is not rocket surgery -
these could use a little better presentation, but chourico and bacon works pretty good for flavoring. i usually add some maine lobster to the clam cakes as well.

gotta watch that clamshell box as anything real hot will start to melt the bottom. Make sure you have the bottom lined with lettuce and parsley on the top to make the food sit up.
Given that, I would avoid some foods like shrimp and scallops unless you can get them to sit on the garnish without falling into it. Couple ideas
1. Crab cakes
2. Crab stuffed mushrooms
3. Seafood enchilada
4. Fish tacos
5. Seafood quasadilla
