Prime Rib a la Mad Max

Got this 9 pound Prime Rib so I rubbed some mustard + some Cattle Boy gourmet seasoning & fresh rosemary from my garden......

Seared it at 650* +.......


Closed the lids & let it rest for a while adding some malbec....'til dome temp. came down to 325*.....................................

...Oppened this present from uncle Gustavo to my father in law.....a Chateau Margaux Cru Classe 1998 a true delicacy..............


Pulled at 125* internal.......& foiled for a few minutes.....


We had all cooking terms on each plate....all so so tender.....DELICIOSO!!!!!!

Ross.....one of my best......very tender...and full of flavor...started with the plate setter but then removed it since I had the clay pot with the wine.....& then it started to pick up the flavor...

Muy Bueno mi hermano! Great job, Beli. "Prime Rib a la Mad Max", I have to admit that it's kinda hard to see the words "Prime" and "Max" in the same sentence. :laugh: BTW, great bottle of vino!

TKS Steve....it´s a normal clay pot which I have used for many years......also, as I have the pot I´m not using a plate setter....also, the wine adds a lot to the flavour & tenderness...PA??...sure how many orders would you like?? :P ..been to Pittsburgh a while ago on business.....All the best!!
