Chicken and Italian Suasage Cacciatora

We made a wonderful dish that is a big hit in this house. Everything blended together to form one of the best comfort dishes that I have cooked in a long time. One of the things I learned was that I need a bigger dutch oven :laugh: . I hope you guys enjoy the pics.
The ingredients for this dish. Minus the mushrooms which I forgot to put in the picture...
First you take the Italian sausage and cut it in half. If you buy it by the roll then 3" pieces is what you want...
Spice up the chicken thighs with Garlic, Salt, Pepper, and Cayenne Pepper...
The dutch oven setup...[/b]
Chicken and Sausage ready for browning. After the sausage is brown, remove and set aside...
While the sausage is cooking you can prep the sauce and veggies...
Tony's, Basil, Italian Seasoning, Fennel Seed, Dried Parsley...
The veggies are in two stages. First stage is Onion, 6 cloves of Garlic, and 1/2 of each of the bell peppers...
Now brown the chicken thighs...(I should have browned these more than I did)
Then add the Onions, Garlic, 1/2 the peppers and the sauce. Then cook at 300 for 45 minutes...
After 45 minutes add the rest of the peppers, Italian sausage and mushrooms. Mix well...
Here are the vent settings for the 45 minute cook. When you have added the sausage and mushrooms you can leave the top the same but close the bottom vent all the way...
Now this dish usually gets a rice accompaniment. Brie and I decided to do a spicy homemade french fries for the base. It was an awesome choice...

That looks great, but just out of curiosity, did you ever think of starting the sausage and chicken directly on the grill and then adding everything to the DO?

Not really. I wanted every single ounce of flavor in my DO. You could grill it but I like this method better.This is the greatest signature EVAR! -

Sir, My wife was look'en threw the post and it's late but I just wanted to say my hat is off to you. A truly great post! The pics and cook are both 1st class. I'm stuffed from my cook but it made me hungry! Gal reminds me of my little neice. Red hair and all. A doll!

During the cook do you keep the lid on or off the DO? -
