Copycat Recipe: Alice Springs Chicken

Years ago, way back before I started really cooking, I was enamored with Outback Steakhouse's Alice Springs Chicken. I found this recipe on Copykat.com, made it in the oven and the family thought it was great.

I haven't made it it years, so we pulled it out and gave it a spin on the Egg this afternoon. It was PERFECT football food.

You can find the full details on my blog but the down and dirty is:

Season chicken breasts (boneless, skinless) with your favorite poultry rub and grill direct at 350f for 4 minutes a side.

Switch to indirect by dropping the plate setter in. Brush each breast on both sides with a honey mustard sauce. (I used Ken's Steakhouse, love it.) Top each piece with sliced mushrooms, sliced black olives, chopped cooked bacon, and chopped green onion.

Cover it all with a mess of shredded cheese and cook another 15-20 minutes until the breasts hit 160f internal.

Serve it up with your favorite pub foods like some twice Egged potatoes and you're in business!

I suppose if that's not enough carbs you could throw it on a bun as a sandwich but today I chose to take my carbs in liquid form:)
