Wings Help! I'm Experimenting!

I saw a post from Grillmeister he's cooking wings. I got some today and want to experiment. I've never done these on the BGE although I can make some killer wings inside ( I'm new to all this and can just IMAGINE how they would taste on the egg). I'd like to do some tomorrow with just hubby and me and see how they turn out. My husband works for a Car Dealership and I would like to take some there next Saturday. Any suggestions as to the best method, times, temps, etc.? I saw one post about brining the wings. Is that necessary or does it really help? Also, I've read the recipes for a crusty type coating. I've never had wings that way. So many seem to cook direct for a short period of time with a simple sauce and sounds really good. Any advice would be appreciated. I'll let you know results if you can help me out. What's the best way in everyone's opinion? Thanks!

    I have not cooked any great wings in less than an hour. They seem to do best with more time to render the skin, and cook through to the joint. When you can rip them apart at the joint easily they are done. 275-300 direct for an hour, or 250 direct for an hour and a half or more works great. Also had good luck with 300 indirect. [p]Many ways to go with treatment....just a rub, a rub and sauce, a sweet/hot marinade, or ChefRD-style breaded wings that cook up crunchy....and pictured here.[p]Have fun! Never really liked wings that much until I gave them time. Hope this helps a bit.

  • Tanya,[p]Take the wings, snip the tips off, run in Olive Oil, and dust with Dizzy Pig's Tsunami Spin or Jamaican Firewalk.[p]Cook Direct, turning frequently at 325 for about an hour.[p]Great wings!

    That simple recipe got my attention and I just started the process. I may dust half with Tsunami Spin and the other half with Jamaican Firewalk and the other half (yes, I've been in the rum already) with something I picked up at the store a couple of weeks ago.
