My first quesadilla on the EGG!

I was attemting to recreate a recipe I did not get to try this weekend at the EGGfest in Southern California. I heard so many great things about it, but never had the opportunity to sample it.

I cooked two chicken breasts at 300 with a hint of apple smoke. Cooked them so perfectly that the juices ran all over the darn cutting board. I prepared two large tortillas by coating outside with a brush of olive oil, then placed my cheese mixture onto the tortilla, followed by chicken breast I shred. It only took about 10 minutes for each one to cook. they turned out beautifully!

I learned very quickly to mash the tortillas together to get the cheese to stick to the other side. Otherwise, you could lose your ingredients while flipping. THE EGG RULES! Everyone loved them.

Dale, I could not figure out when and where, or what type of chorizo to toss in there. Therefore, it was omitted from my attempt at a recreation. They still rocked and my family was happy with the results.

    You can use any kind of chorizo, and Shad your family rocks anyway.Any wife that will put up with you throwiing a party for 250 of yor friends and still loves you is a keeper.I will be in the shop some time next week to spend your money.

    Shad this is the real recipe that I cooked with.


    Marinate 4 split breast chicken breasts in Italian dessing for 3 hours,rub heavy with Chili powder and smoke with cherry wood at 350 for 1 hour or 175 internal.Shred chicken and place in a tray.In a cast iron skillet slice 2sweet onions and 1 cube butter and carmelize(approx 20 min) In another skillet heat up 16 oz of mexicn chorizo util bubbly (approx 20 min)remove both skillets from grill-set aside-dip 1 torflour tortilla in onion-butter mix and place on grill slathr with chorizo -spread onions on and cover liberally in pepper jack and chedder cheeses.Grill one side until it browns and then flip and place cheese on top until melted.Iserved w/creamy chipotle dressing.8oz sour cream,3 cloves garlic,5 chipotles-seeded,salt,pepper and blend until smooth.

    Did you do 2 different type of quesadilla's? One with chicken and cheese and one with chorizo and onion? Or just one with chicken, chorizo, cheese and onion? Either way I'm sure they're delicious!!

    I did just one w/ chorizo,onion,cheese and chicken.We served almost 90 of these at the eggfest.
