Chopping Hell

Whew! What a cooking day this has been! Spent much of the day chopping like I've never chopped before! Everthing I cooked today required chopping celery into .25 inch pieces or roughly chopping mushrooms or finely chopping onions. My mom gave me this mini food processor that she found for $10 at Bradlees that was a tremendous help but still, I'm pooped! The good news is that tomorrow all there is to do is actually cook the bird, finish the gravy with a combo of the turkey stock, arrowroot, and drippings plus whip up the chocolate roulade and chocolate sauce. I'm figuring about an hour prep time plus a bunch of hours sit around time. I figure a bottle of wine may help the time pass a little easier. Also, I picked up a bottle of Amaretto & Cognac mix for the roulade. I almost never drink alcohol other than beer and wine but that sounds mighty good and I look forward to a taste of whatever I don't use to cook.[p]Happy Easter,
